This is a perfect dish if you are cooking for lots of people. I took inspiration from Jamie Oliver for this recipe. You can make it the day before if you wish as well so its super easy on the night. I promise its a crowd pleaser! Recipe is for 4 people.
Ingredients
Lemongrass paste (2 tbsp,) a bunch of fresh coriander, 5 jarred peppers, 5 cm bit of ginger, 5 garlic cloves, 1 tbsp sesame oil, 1 tbsp fish sauce, 1 tbsp soy sauce, 1 tbsp tomato puree, a pack of chicken, a pack of mangetout, a pack of baby sweetcorn, 1 400g tin of coconut milk.
Method
Firstly you want to make the curry paste! It is super simple, all you do is pop the lemongrass paste, coriander, peppers, ginger, garlic, oil, fish sauce, soy sauce, tomato puree in a blender until it forms a paste.
Then cook the chicken for about 7 minutes.
I always pop the curry paste in with the Chicken give it a stir then chuck the veg in.
You then want to pop in the coconut milk give it all a good mix around.
Leave it to bubble on a low heat.
The curry is then ready to serve when you are!
Top tip; Coriander is always a nice touch for serving.

pop the biscuit and butter mix into a cake tin about 20cm. Pressing it down with the back of a spoon so it’s all firm.
Pop the base in the fridge.

The consistency should look like the picture to the left.
Once it is whisked put it into the cake tin and pop it back in the fridge for at least 3 hours !
When you are ready to serve grate some more lime onto the top and you have it… a very tasty lime cheesecake.
